Both Mitch and I used AMX Platinum 2-for-1 for our air for DOLPHIN. This is the first time that I have ever found it to be a worthwhile consideration.
However, there are several constraints to keep in mind: (1) You need an AMX Platinum Card; (2) It only works with Air France and Delta for Tahiti; (3) Air France does not fly every day from LAX so there are limited seats available; (4); You do get first class domestic air; (5) You depart LAX close to midnight and arrive in PPT around 5 AM, and for the return you depart PPT at 8 AM and arrive in LAX at 7 PM, so if you are going East you will probably have a red-eye.
To give you an idea, it costs approximately $7K for our flights from the East Coast to Papeete in First/Business Class round-trip per couple.
Let me know if you have any questions. Mitch and I found out the hard way that the AMX Platinum Travel agents who handle this vary in their knowledge of how to do this.

Beth and I just booked business class Air Tahiti Nui. One of us used Delta points, the other American. Delta added a hefty surcharge (about $500). American did not--just $78 for taxes. delta required 150 points, and required additional points for the domestic leg to and from LAX. American required 125 points for all legs total, including first class for the domestic legs.

Can AMEX Platinum 2 for 1 be used for one way fares or only round trip?

I think it has to be round-trip, but you should double-check. I did a quick search, but I think you need to call if you want to know for sure.
