This is an easy, delicious & heart healthy recipe. We had salmon en papillote several times on our recent month in France. You may use any fish & chicken is also very good. One dish oven meal. This is my easy version without bothering with parchment paper:
1.Preheat oven to 400 degrees. Sprinkle shredded carrots, diced onions,garalic,spinach or whatever you want in bottom of pyrex dish. Just some flavorful layer to form bed for fish.
2. Place fish filets or steaks on top.
3. Add chicken stock diluted with water, maybe an inch, not enough to cover fish.
4. Cover dish with aluminium foil & bake for 30 minutes or until fish flakes easily.
Optional final glaze:
5. Pour just enough bbq sauce to cover top of fish & sprinkle with toasted sesame seeds. Place under broiler until sauce bubbles.
It is alwasy moist & never dry no matter how long you cook it.
